Chef Virginia Willis updates her classic 'Bon Appetit, Y'all'

You needn’t travel to the South of France, as the American South meets the best of French cuisine in Bon Appetit, Y’all by the award-winning cookbook author and chef Virginia Willis.

Her popular 2008 volume has been updated and released with a new preface as well as a new take on some classics. Virginia Willis joined “City Lights” host Lois Reitzes recently to discuss the updated classic.

“We’ve added new recipes, we’ve added new photographs… a new introduction and then… in many of the other recipes where I could reduce the fat and calories without sacrificing flavor, I did, and I’m just thrilled with the results,” says Willis about her new updated book.



The original came out almost 15 years ago. In that time, Willis has been on an incredibly impactful health journey that left her with a new ethos of searching for recipes that are both “good and good for you.”

The results are an even better version of the now classic Southern cookbook, affording readers a combination of delicious dishes and healthier (but not any less tasteful) recipes.

Not all of her recipes got updates, however.

“Many of the heritage recipes, like my grandmother’s fried chicken and the classic older Southern recipes, I left them be. They are what they are, and there’s no need to quote, unquote, lighten things up,” explained Willis. Some things are just perfect the way they are.
